Harvest and processing for Bergamot : November- February
Fruits are collected manually in order to preserve their qualities, and then arranged in proper baskets waiting to be processed.
Bergamot fruits are placed in large tanks to be washed and processed using the peeling machine which works on the zest’s fruit to get the Oil.
The essence is obtained through cold extraction following the separation process of the oil from the water by centrifugation.
